I'm a little concerned he's going to be hungry if he only gets two chicken quarters a day. If I think he is, do I give him a third, or is there something else you would recommend I give him? I don't really want to fall back to kibble, but I will if you think I should. Just wondering if there's something else you can think of that would be a good snack or filler if he seems like he's still hungry.

I get legs and thighs when they are on special and top up quarters that are a little under, I also get gizzards to use as a top up, you can give him those as they are considered muscle (meat) not offal

I feed Poppy about 13 oz twice a day, I'm actually increasing slowly since she's skinny and so very active. That amount seemed to be slightly more then a 1/4 so you could give part of another 1/4 with each meal. If you aren't measuring then you need to just watch his body, if he's getting thick cut back and if you're seeing more of his rib add more. I always used to 'eyeball' it until my chihuahua got quite overweight, I really needed to weigh it to keep him on track (hard to only feed 3 oz a day or 1.5 oz a meal!)
Raw fed dogs always seem to want more so you can't always let them tell you whats up LOL. You could add a tbsp of yogurt to his meals too or veggies if you really wanted to.

I'm a little confused. I thought giblets were offal - the heart, gizzard & liver part of the animal. Can you (or anyone) clarify this for me? Thanks.

Also, can he have a raw egg or two a week while we're doing this or should I stick to just meat.

Last, but not least, today he's acting like he has to poop, but there's very little coming out. And it's quite loose. He was having loose stools before this, so I'm not saying that's related, but I'm wondering if there's anything I should be watching out for or maybe do - like give him some canned pumpkin.

Okay here is where it can get a little confusing. First I'll start by saying that after looking for a picture on the net of what I buy packged as "giblets" I found you guys actually call them "gizzards" (why can't things just be universal it had me confused when I read your post but now I get you call it all (offal) giblets - I will have to remember that so as not to confuse anyone else). Now this is where I may confuse you a little, the "gizzards" as you guys call them are a muscle as is the heart - yes they are organs (offal) but they are muscles therefore they would be part of the muscle (meat) portion so IMO okay to give (just remember the heart is a little richer than ordinary muscle so don't go overboard).
I don't see any problems with giving an egg, especially if he has already been fed egg before (I believe Innova has egg in it - thats what you were feeding wasn't it?)
The poop - if it's a small amount coming it may be a sign that its firming up, the bone will actually help firm it. I would wait a little longer and see if it's in the process of coming good.

Okay - that makes sense then. So we can give him the heart and gizzards (in moderation) as muscle, but the liver & kidney's would be offal.

I showed the video of his raw meal to my family and some friends and at first they were all amazed and shocked You gave your dog raw chicken! And the bones! What about salmonella? What did your vet say? LOL! I don't blame them - same questions I had. It was a great educational opportunity. And the video speaks volumes. Now they say " It does look fun!" "That's great!" " Wow! That's amazing/weird, yet incredibly natural when you think about it."
