All the gross stuff lol, but it is very good for dogs
 . It can be from any animal and includes things like liver, kidney, brain, trachea, tripe, lung, brain - organs basically. It can get a little tricky in that gizzards and heart are muscles so they can be included in the 80% muscle portion ( I feed whole meals of gizzards )
